Pumpkin Soup
Ingredients
500g pumpkin, cubed
350ml (1 ½ cups) vegetable stock
1 sliced onion
2 diced carrots
1 tsp ground cinnamon
Preparation Method
Serves 4:
Place the vegetables and stock in a large saucepan, bring to the boil and simmer for 15-20 mins until the vegetables are tender. Blend or process until smooth.
Leftover soup can be frozen and re-heated.
