Muffins

Ingredients

- 2 ½ cups self-raising flour
- ½ cup sugar
- 2 eggs, lightly beaten
- 1 ¾ skim milk
- 150 g butter, melted (use low-fat margarine for a healthier alternative)
- 2 bananas, mashed OR 1 cup blueberries OR 1 cup choc-chips OR any other fruit flavour you wish to add.

Preparation Method

1- Pre-heat oven to 160 degrees C and grease a 12-hole muffin tray. Mix flour and sugar in a large mixing bowl with a wooden spoon.
2- Add eggs and skim milk to another bowl, whisk together with a fork.
3- Make a hole in the centre of the flour and sugar mixture with the wooden spoon and add into it the melted butter, egg and milk mixture and banana (or whatever flavour is chosen).
4- Mix ingredients together until JUST combined. Mixture should still be lumpy.
5- Spoon mixture evenly between 12 muffin cases, and bake for 20-25 minutes.
6- Muffins are ready when lightly browned and spongy to touch on top.

Alternatives: instead of banana, add
- 1 cup choc-chips
- 1 cup blueberries

- 1 cup chopped apple, and 1 tsp cinnamon
- 1 cup raspberry and 1 cup white-choc chips
- 1 cup mixed berries
Or try adding 2 tbsp cocoa powder to whatever flavour you choose.
