Green Coconut Curry

Ingredients

4 tbs. green curry paste
400ml can coconut milk
1.5 cups mixed sweet potato
1.5 cups mixed vegetables (broccoli, carrots, zucchinis, green beans, etc)

Preparation Method

Heat a wok or a deep frying pan (with a lid) to low heat. Add the green curry paste and gently stir-fry for a minute or so. Add the sweet potato and coconut milk with 1 cup water. Cover with a lid, and bring to the boil and gently simmer until sweet potato is almost cooked. Add your mixed vegetables (exclude soft veggies, like zucchini and squash, etc.) and continue to simmer for another 10 minutes. When the sweet potato is starting to fall apart, add soft vegetables. Simmer for another 5 minutes. When all vegetables are cooked and the sweet potato has broken down to almost a puree, the dish is ready.
Serves 4

Optional: This is delicious served over rice and is nice with chicken as well.
