Baked Tuna Omelette

Ingredients: 

1 x 425g tin tuna
12 eggs, beaten
1 punnet cherry tomatoes
2 medium zucchini, sliced
1 bunch spring onions, chopped
6 mushrooms, sliced
1½ cups grated mozzarella cheese

1. Combine all ingredients in a large bowl.
2. Pour mixture into a lightly greased baking dish.
3. Sprinkle some extra grated cheese on top.
4. Bake at 180°C for about 25 minutes or until set

Serves 6

Vegetable Frittata

Ingredients: 

1 potato, cubed & cooked
1 cup cubed sweet potato, cooked
1 cup baby spinach leaves
½ cup corn kernels
1 bunch asparagus, chopped
2 shallots, chopped
3 eggs
¾ cup soy or dairy milk
2 tablespoons plain flour
½ cup reduced fat cheese
½ teaspoon salt [optional]
¼ cup reduced fat cheese, extra

You can use a packet of mixed frozen vegetables, that have already been cubed. To cook, follow packet directions

1- Place all the vegetables in a large bowl.

2- Combine eggs, soy or dairy milk, flour, cheese & salt. Stir into vegetables. Place mixture into a lightly greased 23cm pie plate.

3- Bake in a moderate oven (180°C) for 40 minutes, then sprinkle with extra cheese and place under griller until golden.

Creamed rice

Ingredients: 

6 CUPS SO GOOD SOYMILK
¼ CUP SUGAR
¾ CUP SHORT-GRAIN WHITE RICE
½ CUP SANITARIUM SULTANAS
¼ TEASPOON GROUND CARDAMOM (OPTIONAL)
1 TABLESPOON CHOPPED TOASTED PISTACHIO NUTS

* can substitute with any type of milk

1- Place the So Good, sugar, rice and sultanas in a large heavy-based saucepan. Bring the mixture to the boil, then reduce the heat and simmer, stirring occasionally, for about 45 minutes or until the mixture thickens.

2- Add the ground cardamom, if using.

3- Serve the rice topped with pistachio nuts.

Scrambled Eggs

Ingredients: 

- 2 eggs
- ½ cup skim milk
- herbs of choice
- salt and pepper to taste.

1- Add all ingredients to a mixing bowl, and whisk thoroughly with a fork.
2- Place mixture in a greased pan over a hot stove.
3- Using a spatula continually scrape the bottom of the pan- as the eggs begin to cook, you should be turning over lumps.
4- Continue repeatedly turning the mixture over until it appears cooked.
5- Remove from heat, and serve on toast.

Serves 1. Double or triple the recipe to serve 2 or 3 people.

French Toast

Ingredients: 

6 thick slices bread
2 eggs
160 ml milk
0.6 g ground cinnamon (optional)
0.8 g ground nutmeg (optional)
5 ml vanilla extract (optional)
salt to taste

Beat together egg, milk, salt, desired spices and vanilla.
Heat a lightly oiled griddle of skillet over medium-high flame.
Dunk each slice of bread in egg mixture, soaking both sides. Place in pan, and cook on both sides until golden. Serve hot.

Omelette

Ingredients: 

2 eggs
1 tblsp milk
Salt and pepper to taste
Choose from: cheese, chopped tomato, ham, chopped mushrooms, diced onion, chopped capsicum, bacon

1- Whisk eggs together in a mixing bowl.
2- Add milk, salt and peeper (just a pinch), and whisk.
3- Grease a frypan with olive oil spray or butter, and heat over stove
4- Pour egg mixture into frypan, and move the pan around, so the mixture covers the pan and cooks evenly.
5- When the egg mixture looks almost cooked, add your choice of toppings (you can add almost anything you like).
6- Fold omelette in half, remove from heat, and serve.

SERVES 1

Try these combinations of toppings:
- cheese, ham and tomato
- onion, bacon, mushrooms, tomato, capsicum and cheese

Pizza Muffins

Ingredients: 

1 packet (6) English muffins
Tomato paste
200g lean shredded ham
1 can chopped pineapple
Grated cheese

1- Cut English muffins in half
2- Spread each muffin half with tomato paste
3- Add some shredded ham and pineapple to each muffin, and top with grated cheese.
4- Place muffins on a baking tray and cook for 10-15 mins until crispy.

Makes 12

Pancakes

Ingredients: 

1 ½ cups self raising flour
¾ cup skim milk
1 egg
3 tbsp sugar (add more or less as you please)
Olive oil spray, or butter to grease pan

1- Add all ingredients to a mixing bowl. Beat with electric mixer or by hand until smooth.
2- Grease pan, heat on stove, then add 1 big spoonful of mixture.
3- Pancake is ready to be flipped when the surface starts to bubble. When bubbling, flip. Cook on this side until pale brown.
4- Remove pancake from pan, and repeat process with remaining mixture.
Serves 2

Vegemite on Toast

Ingredients: 

Bread
Vegemite
Butter or Margarine
Plate
Butter Knife
Toaster

-Place desired number of slices in toaster and cook to desired level
-Remove bread from toaster and lay on plate
-Use knife to apply butter, then vegemite to one side of each slice of bread.
