Egg and Potato Mash
3 eggs
3 medium sized potatoes
1 small onion, chopped finely
1/2 cup cream
2 tablespoons milk
Salt and pepper
1. Boil eggs and potatoes until potatoes are soft to mash.
2. Mash eggs and potatoes together and add onion.
3. Add cream and milk and mash further.
4. Season with salt and pepper

Roast Potato & Red Onion Pizza
1 MEDIUM RED ONION, THINLY SLICED
2 MEDIUM POTATOES, PEELED & THINLY SLICED
1 SMALL SWEET POTATO, PEELED & THINLY SLICED
2 TABLESPOONS OLIVE OIL
26CM PIZZA BASE
140G CARTON PIZZA SAUCE
FRESH ROSEMARY
1 CUP GRATED REDUCED FAT CHEESE
½ TEASPOON SALT (OPTIONAL)
1- Toss onion, potato & sweet potato in a baking tray with oil. Bake in a hot oven (200°C) for 20 minutes, turning occasionally, until onion is soft & potato lightly browned.
2- Place pizza base on a tray. Spread with pizza sauce & sprinkle with half the cheese & the rosemary. Top with potato mixture. Sprinkle with salt (optional) & remaining cheese.
3- Bake in a hot oven (200°C) for 15-20 minutes or until cheese is melted & pizza base crisp.

Roasted Potatoes with Greens
6 small red potatoes, quartered
30 g butter
2 cloves garlic, minced
2 g fresh rosemary, chopped
sea salt and ground black pepper to taste
30 g fresh spinach leaves
1. Preheat the oven to 400 degrees F (200 degrees C).
2. Place the potatoes in a single layer in a ceramic casserole dish. Melt the butter in a skillet over medium heat. Add garlic, and cook until golden. Stir in the rosemary, and cook just until fragrant. Pour over the potatoes in the dish. Season with sea salt and pepper.
3. Roast uncovered for about 30 minutes in the preheated oven, until the potatoes are fork tender. Remove from the oven, and toss with the spinach leaves. Return to the oven for 1 to 2 minutes, until the spinach has wilted.
