South Indian Lamb Curry
1 kg lamb chopped into bite size pieces
1 large onion, finely chopped
3 large tomatoes, skinned and chopped
2-3 potatoes cut into fairly large pieces
1 tablespoon curry powder
3 gloves garlic, chopped finely
Piece of ginger, to taste, cleaned and chopped finely
2-3 tablespoons vegetable oil
3-4 curry leaves
3 tablespoons chopped fresh coriander
1. Warm the oil in a heavy bottomed pot.
2. Add the chopped onion and saute until they are glossy. Add the garlic, ginger, cummin seeds, curry leaves and curry powder and fry together gently for about 3 minutes, being careful not to burn the onions.
3. Add the chopped tomatoes and let this all simmer together for a few minutes until it becomes a lovely rich sauce.
4. Add the chopped lamb and about 1 teaspoon of salt.
5. Turn the stove down to a very gentle simmer and let it cook for about 1 hour until the lamb is half cooked.
Devilled Lamb Chops
8 lamb steaks/loin chops
4 tablespoons fruit chutney
2 tablespoons brown sugar
2 teaspoons curry powder
4 teaspoons soy sauce
2 teaspoons white vinegar
1. Mix all ingredients together in a bowl.
2. Spoon mixture over lamb chops, cover and refrigerate for at least 2 hours.
3. Fry chops in a non-stick frypan until cooked through.
Recipe notes: We prefer to dry fry these as they come out with a crispy coating. You can however bake in the oven or cook in the microwave.

Spicy Pasta Bake
Dash olive oil
1 garlic clove, finely diced
1 onion, diced
½ teaspoon hot chili paste Salt and pepper
1 x 300g tin four bean mix, drained
¼ red capsicum, diced
2 large button mushrooms, sliced
500 g beef mince
1 x 410g tin crushed tomato
200g macaroni
1 cup shredded cheese
Paprika & cayenne pepper
1. Heat oil in a pan and add garlic, onion, chili and a pinch each of salt & pepper. Turn until onion is translucent.
2. Add beans, capsicum & mushrooms and stir through.
3. Add beef and brown, turning regularly.
4. Add tomato, stir through and simmer 15 minutes.
5. In the meantime, cook pasta and pre-heat oven to 200°C.
6. Drain pasta and add to pan, mix through.
7. Transfer to a large Pyrex dish and top with cheese.
8. Sprinkle with paprika and cayenne, bake for 15 minutes until golden.

Beef and Vege Casserole
· 800g diced beef (for casserole) e.g topside steak trimmed of all visible fat · 1 large onion (or 2 medium), chopped · 4 cloves garlic, crushed · 1/2 cup chopped parsley · 1 large carrot sliced · 1 large capsicum, sliced · 1 x 400g can chopped tomatoes (e.g La Gina) · 1 cup frozen peas · 2 teaspoons vegetable or beef stock powder (e.g Massel) · 2 cups water · 1 cup red wine (this will add a lovely tang to the dish) · 2 teaspoons paprika · 1 teaspoon oregano (try getting dry oregano that is still on its stalk from a Greek/Turkish deli - the flavour is much better than loose dry oregano) · 1/4 cup extra virgin olive oil · iodised salt (end of cooking if needed) Accompaniments: boiled pasta/noodles or rice or mashed potatoes
This recipe is really easy, and only takes 15 mins to prepare, but needs to cook for a couple of hours. 1. Cook onion and garlic in oil in a wide saucepan until transparent. 2. Add paprika, oregano, parsley and stir well. 3. Pour in water, wine and tinned tomato. 4. Add sliced vegetables, peas and stock powder. 5. Add diced beef to pot. Make sure beef is completely covered by liquid, if not, then add more water. 6. Bring to the boil and simmer covered for 1-2 hours or until beef is tender and the liquid is reduced to a thick sauce.
Beef Pasta Bake
1 tablespoon oil
1 onion, chopped
300g beef mince
400g large spiral pasta
1 x 820g tin tomato soup
500g cheddar cheese, grated
1. Heat oil in large frying pan and saute onion for about 5 minutes.
2. Add mince and cook until browned.
3. Cook pasta in boiling, salted water.
4. Combine mince mixture, pasta, tomato soup and three quarters of the cheese.
5. Place in a casserole dish, sprinkle with remaining cheese and bake at 180°C for about 25 minutes, until the cheese is well browned.
