Wholemeal Apple Cake

Ingredients: 

3 cups wholemeal self raising flour
1 teaspoon ground cinnamon
3 eggs, beaten
3 cups shredded, peeled apples (about 4 medium apples)
1 1/2 cups sugar
2/3 cup extra virgin olive oil
1 teaspoon vanilla

1. Grease and flour two 21x10x5 cm (8x4x2-inch) baking pans. Set aside. In a medium bowl combine flour, soda, salt, cinnamon, and baking powder; set aside.
2. In a large bowl combine eggs, apples, sugar, oil, and vanilla. Stir in flour mixture just until moistened. Pour batter into prepared pans.
3. Bake in a 175 degree C (325 degrees F) oven for 45 to 55 minutes or until toothpick inserted in center comes out clean.
4. Cool in pans on wire racks for 10 minutes. Remove from pans. Cool on wire racks. Wrap and store overnight before slicing.

Makes about 30 serves. Can be frozen.

Wholemeal Poppy Seed cake

Ingredients: 

3 cups wholemeal selfraising flour
1 1/2 cups sugar
1/4 cup poppy seeds
1 teaspoon baking powder
3/4 cup extra virgin olive oil (or peanut oil)
3 eggs
3/4 cup reduced fat milk
2 teaspoons finely shredded orange peel
3/4 cup orange juice (don't discard the pulp)

This cake is a healthy alternative to other cakes- a great idea for a snack.

1. Grease and lightly flour a fluted cake tin.
2. Combine all ingredients in a mixing bowl and beat with an electric mixer on low to medium speed for about 60 seconds. Pour batter into cake tin.
3. Bake in a 180 degree C oven for 50-55 minutes or until knife inserted near centre of cake comes out clean (this cake can also be freezed for up to 1 month).
4. Leave in tin for 10 minutes before turning out on to a wire rack to cool.

Makes 12 pieces.

Date & Oat Bran Muffins

Ingredients: 

1 ½ Cups chopped pitted Sanitarium dates
½ Cup sugar
¼ Cup water
4 Tablespoons margarine
5 Sanitarium Weet-Bix Oat Bran, crushed
1 ¼ Cups wholemeal self raising flour
1 Teaspoon baking powder
2 Ripe bannanas, mashed
1 Egg
½ Cup Sanitarium So Good soymilk

* can substitute with any type of milk

1- combine dates, sugar, water and margarine in a saucepan and bring to boil, reduce heat and simmer for 1 minute (or microwave on HIGH for 4 minutes). Cool.

2- Place Weet-Bix Oat Bran in a large bowl. Add sifted flour and baking powder. Add bananas, egg and So Good to date mixture.

3- Stir liquid ingredients into dry ingredients. Mixing until just combined.

4- Bake in a moderately hot oven, 190°C, for 20 minutes or until cooked.

Craisin & Apple Squares

Ingredients: 

1 CUP WHOLEMEAL SELF RAISING FLOUR
½ CUP ROLLED OATS
½ CUP CRAISINS
½ CUP DICED DRIED APPLE
1/3 CUP SUGAR
125G MARGARINE
1 TABLESPOON SANITARIUM HONEY

1. Combine dry ingredients in a bowl. Melt margarine and honey together and add to dry ingredients.

2. Press mixture into a lightly greased and lined 18cm x 27cm lamington tin.

3. Bake in a moderate oven (180°C) for 25 minutes. Cut into 24 squares.

Apple Muesli Muffins

Ingredients: 

1 ½ cups Sanitarium Low Fat Natural Muesli
1 cup wholemeal self-raising flour, sifted
½ cup sugar
1 cup grated apple
½ cup Sanitarium Sultanas
1 egg, lightly beaten
1/3 cup oil
1 cup Sanitarium So Good Lite *

* can substitute with any milk type

1- Place muesli, sifted flour, sugar, apple and sultanas in a large bowl. In a separate bowl combine egg, oil and So Good Lite.

2- Add liquid ingredients to dry ingredients and mix gently until just combined. Spoon mixture into lightly greased muffin tins.

3- Bake in a moderately hot oven (190°C) for 30 minutes or until lightly golden. Makes 12.

Muffins

Ingredients: 

- 2 ½ cups self-raising flour
- ½ cup sugar
- 2 eggs, lightly beaten
- 1 ¾ skim milk
- 150 g butter, melted (use low-fat margarine for a healthier alternative)
- 2 bananas, mashed OR 1 cup blueberries OR 1 cup choc-chips OR any other fruit flavour you wish to add.

1- Pre-heat oven to 160 degrees C and grease a 12-hole muffin tray. Mix flour and sugar in a large mixing bowl with a wooden spoon.
2- Add eggs and skim milk to another bowl, whisk together with a fork.
3- Make a hole in the centre of the flour and sugar mixture with the wooden spoon and add into it the melted butter, egg and milk mixture and banana (or whatever flavour is chosen).
4- Mix ingredients together until JUST combined. Mixture should still be lumpy.
5- Spoon mixture evenly between 12 muffin cases, and bake for 20-25 minutes.

Apple & Raspberry Crumble

Ingredients: 

800g can pie apple
1 cup frozen raspberries

Crumble

4 Weet-Bix, lightly crushed
1/2 cup rolled oats
1/3 cup chopped macadamia nuts (optional)
1 tablespoon brown sugar
2 tablespoons macadamia nut oil or canola oil

* can substitued butter for oil

1- Combine apples and berries and place in a casserole dish.
2- Combine crumble ingredients and sprinkle over fruit.
3- Bake in a moderate oven, 180°C, for 30 minutes or until lightly browned.

Serve immediately with low-fat ice cream or custard

Smoothies

Ingredients: 

- 1 banana
- 1 scoop of icecream OR 1 tub sweet yoghurt
- 1 tblsp honey
- 1 ½ cup skim milk

Add all ingredients to blender and mix. Alternatively, add ingredients to a glass, the use a stab-mixer to blend.

Alternative: replace the banana with a different fruit, or add a spoon of cocoa powder or drinking chocolate.
