Egg and Potato Mash

Ingredients: 

3 eggs
3 medium sized potatoes
1 small onion, chopped finely
1/2 cup cream
2 tablespoons milk
Salt and pepper

1. Boil eggs and potatoes until potatoes are soft to mash.
2. Mash eggs and potatoes together and add onion.
3. Add cream and milk and mash further.
4. Season with salt and pepper

Falafel and Cucumber Sauce

Ingredients: 

1 onion, chopped
30 g fresh parsley
2 cloves garlic, chopped
1 egg
4 g ground cumin
2 g ground coriander
6 g salt
1 dash pepper
0.2 g cayenne pepper
5 ml lemon juice
3 g baking powder
15 ml olive oil
110 g dry bread crumbs
oil for frying

168 g plain yogurt
0.5 cucumber - peeled, seeded, and finely chopped
1 g dried dill weed
salt and pepper to taste
15 ml mayonnaise

1. In a large bowl mash chickpeas until thick and pasty; don't use a blender, as the consistency will be too thin. In a blender, process onion, parsley and garlic until smooth. Stir into mashed chickpeas.

2. In a small bowl combine egg, cumin, coriander, salt, pepper, cayenne, lemon juice and baking powder. Stir into chickpea mixture along with olive oil. Slowly add bread crumbs until mixture is not sticky but will hold together; add more or less bread crumbs, as needed. Form 8 balls and then flatten into patties.

Stir Fry Tomato and Eggs

Ingredients: 

30 ml vegetable oil
6 eggs, beaten
1 green onion, chopped
2 large tomatoes, cut into thin wedges
salt to taste

1. Heat the oil in a large skillet over medium heat. When the oil is hot, add the eggs, and green onion; cook and stir until the eggs are almost solid.

2. Add the tomatoes, and cook until eggs are firm. Season with salt, and serve.

Scrambled Eggs

Ingredients: 

- 2 eggs
- ½ cup skim milk
- herbs of choice
- salt and pepper to taste.

1- Add all ingredients to a mixing bowl, and whisk thoroughly with a fork.
2- Place mixture in a greased pan over a hot stove.
3- Using a spatula continually scrape the bottom of the pan- as the eggs begin to cook, you should be turning over lumps.
4- Continue repeatedly turning the mixture over until it appears cooked.
5- Remove from heat, and serve on toast.

Serves 1. Double or triple the recipe to serve 2 or 3 people.

Omelette

Ingredients: 

2 eggs
1 tblsp milk
Salt and pepper to taste
Choose from: cheese, chopped tomato, ham, chopped mushrooms, diced onion, chopped capsicum, bacon

1- Whisk eggs together in a mixing bowl.
2- Add milk, salt and peeper (just a pinch), and whisk.
3- Grease a frypan with olive oil spray or butter, and heat over stove
4- Pour egg mixture into frypan, and move the pan around, so the mixture covers the pan and cooks evenly.
5- When the egg mixture looks almost cooked, add your choice of toppings (you can add almost anything you like).
6- Fold omelette in half, remove from heat, and serve.

SERVES 1

Try these combinations of toppings:
- cheese, ham and tomato
- onion, bacon, mushrooms, tomato, capsicum and cheese

Pork Dumplings

Ingredients: 

100 (3.5 inch square) wonton wrappers
795 g ground pork
4 cloves of minced garlic
10 g thinly sliced green onion
60 ml soy sauce
45 ml sesame oil
1 egg, beaten
380 g finely shredded Chinese cabbage

1. In a large bowl, combine the pork, ginger, garlic, green onion, soy sauce, sesame oil, egg and cabbage. Stir until well mixed.
2. Place 1 heaping teaspoon of pork filling onto each wonton skin. Moisten edges with water and fold edges over to form a triangle shape. Roll edges slightly to seal in filling. Set dumplings aside on a lightly floured surface until ready to cook.
3. To Cook: Steam dumplings in a covered bamboo or metal steamer for about 15 to 20 minutes. Serve immediately.

Pancakes

Ingredients: 

1 ½ cups self raising flour
¾ cup skim milk
1 egg
3 tbsp sugar (add more or less as you please)
Olive oil spray, or butter to grease pan

1- Add all ingredients to a mixing bowl. Beat with electric mixer or by hand until smooth.
2- Grease pan, heat on stove, then add 1 big spoonful of mixture.
3- Pancake is ready to be flipped when the surface starts to bubble. When bubbling, flip. Cook on this side until pale brown.
4- Remove pancake from pan, and repeat process with remaining mixture.
Serves 2

Frittata

Ingredients: 

6 eggs
1 cup low-fat milk
Salt and pepper to taste
Mixed veges of your choice- try using a bag of frozen mixed vegetables
Optional: chopped lean bacon, ham, onion, chives, herbs
Grated cheese

1- Pre heat oven to 180 degrees C
2- Beat together eggs, milk, alt and pepper, and herbs together in a mixing bowl
3- Pour mixture into a greased oven dish.
4- Sprinkle mixed veges, or whatever ingredients/flavours chosen over egg mixture.
5- Sprinkle grated cheese over dish, then bake in oven for around 30 mins or until egg is set.
