Impossible Quiche
¾ cup plain flour
6 teaspoons butter
4 eggs
2 cups milk
½ cup cheese, grated
1 onion, sliced
3 slices of bacon, diced
2 mushrooms, sliced
2 tomatoes, diced
1 bunch of spring onion, finely chopped
½ cup corn kernels
½ teaspoon basil
1. Combine first 4 ingredients, then mix and add remaining ingredients.
2. Pour into a greased flan dish.
3. Bake for 1 hour in moderate oven.

Baked Tuna Omelette
1 x 425g tin tuna
12 eggs, beaten
1 punnet cherry tomatoes
2 medium zucchini, sliced
1 bunch spring onions, chopped
6 mushrooms, sliced
1½ cups grated mozzarella cheese
1. Combine all ingredients in a large bowl.
2. Pour mixture into a lightly greased baking dish.
3. Sprinkle some extra grated cheese on top.
4. Bake at 180°C for about 25 minutes or until set
Serves 6
Omelette
2 eggs
1 tblsp milk
Salt and pepper to taste
Choose from: cheese, chopped tomato, ham, chopped mushrooms, diced onion, chopped capsicum, bacon
1- Whisk eggs together in a mixing bowl.
2- Add milk, salt and peeper (just a pinch), and whisk.
3- Grease a frypan with olive oil spray or butter, and heat over stove
4- Pour egg mixture into frypan, and move the pan around, so the mixture covers the pan and cooks evenly.
5- When the egg mixture looks almost cooked, add your choice of toppings (you can add almost anything you like).
6- Fold omelette in half, remove from heat, and serve.

- cheese, ham and tomato
- onion, bacon, mushrooms, tomato, capsicum and cheese
